I have been cooking for almost 30 years.

I owned my restaurant for nearly nine years. I wouldn’t have spent so much time cooking if I didn’t love it. I enjoy creating food and sharing it with others. Since I no longer have a restaurant, I needed to find another way to do that.

When we opened, the plan was to blog about the journey of opening and running a restaurant, but the reality of the daily work involved took over, and I never found the time. I was a full-time line cook when we were open, and when we closed, I prepped food for the next day, baked, organized my food orders, and cleaned and maintained the kitchen. Looking back now, I’m unsure how I managed everything, but somehow, I made it work.

As an introvert, some of my fondest memories of the restaurant were the days we were closed when I had the tiny kitchen all to myself. Even though these “days off” were filled with activity, they created a quiet space where I could accomplish a lot. This is also how I got the name of the blog.

Since selling the restaurant at the end of 2019, I have been going through my notes, pictures, and menus, and I am creating this blog to share recipes, tips, and things I’ve learned over the years. In addition to my restaurant recipes, I enjoy taking classic recipes and making them a bit healthier.

My recipes evolve with my age. Now, I try to create lighter meals that satisfy my cravings for more decadent dishes. I am also working on low-sodium recipes to help keep my blood pressure down and high-protein recipes to maintain muscle health as I age. It’s all about balance; I am always working on that too.

Unlike other blogs that fill your screen with long stories and excessive ads, I will keep things short and sweet. Hopefully, I will share enough of a story to provide some background on a recipe while also making it easier for you to get to the recipe and start cooking. Again, balance.
